Ingredients:

1 onion

1 summer squash

2 zucchini

2 cloves garlic

2 Tbsp olive oil (or coconut oil)

Sea Salt

Method:

Preheat the oven to 400 degrees. Chop everything (you can leave garlic whole) and place on a baking sheet. Dress veggies with olive oil and sea salt. Roast for 35-40 minutes. Place veggies in a pot and using an immersion blender blend everything until pureed. Alternatively use a regular blender. Adjust salt and add any other spices you choose.

Serve with fresh cilantro and flax crackers.
