The key to any nut or seed butter is to roast the seeds/nuts in a little sea salt, give or take a drizzle of neutral oil and bam. They’re warmed and ready for the Cuisinart. And yes you’ll need one of those in order to make your own butters, or a food processor like it. Thankfully you can buy pre-roasted nuts and seeds and easily use those – just keep your eyes peeled on the ingredients list.
Ingredients & Method:
2 cups of roasted pumpkin seeds (feel free to sub sunflower seeds or almonds here) – or a 16 oz bag
pinch of salt *unless they’re pre-roasted with salt added
1 tsp cinnamon
1/2 tsp cayenne
~ add all ingredients to your food processor and blend for a looooooooooooooonnnnnng time. Accept the fact that you’re going to get impatient here and keep going. Scrape down the sides of your machine every few minutes. This happens about midway through and toward the end. The butter is finished once you have a pastry-like butter that spreads easily. Enjoy in live veggie nori rolls, with raw veggies as a dip…straight up with a spoon. You do you.
