Maybe the most amazing thing about cabbage soup is how versatile it is – how forgiving it is – how good it is – every day of the week. Whether you eat it every day or not, you can and that would not just be okay but amazing!

Ingredients:

1 head of red or purple cabbage

1 onion

1 zucchini

1 summer squash

1 medium daikon

1 large carrot

1 24 oz can of stewed tomatoes

1 large nub of ginger – chopped

1 – 1.76 oz package of wakame or fresh goo

3 cloves garlic – chopped

Salt, to taste

Tamari or Braggs Aminos

Method:

Ready? Chop everything and place it in a pot. Add 1-2 cups extra water, depending on how thick you want your soup (the wakame will expand). Bring to a gentle boil, reduce heat, cover and cook for 15 minutes. Remove from heat source, keep covered until ready to eat.

Change out any of the ingredients for others, omit the seaweed, tomatoes, ginger or garlic. Make it your own.
