Do me a favor and don’t go out of your way to make this – make this when you have rice already prepared and you need to use it up and you have peppers in your hydrator drawer. Two things most any household can benefit from: rice/veggies. I honestly think this tastes better when you come to the realization that you’re being resourceful. It’s a necessary ingredient!
I bought one of those packages of 6 tri-colored bell peppers from Costco, so this was just two of them.
I took prepared brown rice which I had added 1 shredded white onion and 1 zucchini to and a couple handfuls of spinach. This rice mix I had used on previous days for veggie sushi and buddha bowls.
I filled each cored pepper with the rice mix and drizzled some Primal Kitchen Buffalo sauce, maybe 2 tsp – 1 Tbsp per half (it’s spicy!) then I air fried them at 400 degrees for 15 minutes. That’s it!
This was a wholesome, nourishing, grounding supper that took literally no brain power to make, a little meal prep on a previous day and cost very little to whip up. Hope you make something similar and enjoy during a busy work week like I did!
