I want to teach you a little something about therapeutic eating – even though I touch on the concept of resourcefulness a lot, hopefully you get a little something new and different from this. So I made these muffins using yet again – a smoothie that my son didn’t finish. His smoothies are usually really basic, banana, berries and water. That’s it. So I took the base which was about a pint of liquid and mixed it with dry ingredients like gf flour, oats, chia seed, baking soda, salt, cardamom. I also added another whole sliced banana because I had it handy and it was the last one (why not just use it right?). I baked the 5 muffins that came of this batter at 370 for 35 minutes. Delicious…. But here’s the point = Take what you have and use it as a lens. For me it might be food, but for you it might be your home, your job, your relationship, your body – typically it starts as a challenge. When you take this challenge and use it as a lens you begin to shift your perspective you around it – This is where play comes in really handy. So expand your understanding of it, begin drawing metaphors from it and then hopefully it nourishes your intentions further. Make sense?
Ingredients & Method:
- 1 pint of leftover (abandoned!) smoothie – a combination of banana, strawberry & water
- 1 Tbsp chia seed
- 1 cup oats
- 1/2 cup gluten free flour
- 1 tsp baking soda
- pinch of salt
- 1/2 tsp cardamom
- + 1 ripe banana, sliced
Mix everything into a bowl – let it sit for 20 minutes. The oats and chia seed will expand. Preheat your oven to 370. Spray a standard muffin tin with cooking spray – you’ll only bake roughly 5 heaping muffins and until rising muffins, these you can fill to the brim. Bake for 30-35 minutes. Allow to cool before removing from the tray. Reheat and enjoy with some Miyoko’s Oat Milk butter.
