I made these on a whim – and better so! Let thy curiosity be the guide. Plus, these are too easy not to share. I call these morning glory because they incorporate zucchini, carrot, banana and tahini which somewhat emulates the idea of a morning glory muffin but let’s be honest – they’re healthy to boot!

Preheat your oven to 390 degrees:

Oats – 2 cups

Banana – 2 medium *mashed

Cinnamon – 1 Tbsp 

Sea salt – pinch

Zucchini – 1 medium *shredded

Carrot – 1 medium *peeled & shredded

Carob chips – 1/2 cup 

Tahini – 1/4 cup

Soy milk – 1/3 cup

mix everything 

 

Line a square baking dish with parchment. Bake for 40 minutes. Allow to cool if you have patience.

*You can play with the nut/seed butter – sub sunbutter, almond or peanut butter

*You can swap carob for dairy free chocolate  (I fair better with carob so I’ve been using that more often)

*You can use different alternative milks

*You can use 3/4 cup apple sauce in place of the bananas

*You can even play with the oats and sub brown rice flour, why not?
